Laura Kay Schaefer, born on October 22, 1970, in Irving, Texas, passed away on January 21, 2026. A cherished daughter, devoted mother, and admired friend, Laura lit up the lives of those around her with her kindness, warmth, and infectious smile.
Raised in Irving, Texas, Laura was a proud graduate of MacArthur High School. She continued her education at the University of Texas-Dallas and the University of Phoenix, where she earned an Associate of Arts and Sciences, a Bachelor of Arts, and a Master of Business Administration. These achievements laid the foundation for a successful career that included positions at Nokia, Bank of America, Dean Foods Company, Neiman Marcus, Toyota Motor North America Inc., Stonegate Senior Living LLC, and Half Price Books. Her professional journey spoke to her determination and work ethic, traits that were evident in her commitment to helping others.
Laura was not only passionate about her career but also deeply involved in her community and her faith. As a member of St. Ann Catholic Parish, she found connection and strength in her spirituality. Her love for traveling, fashion, and spending quality time with family and friends brought joy to her life, as she created lasting memories and shared laughter with those she loved.
A remarkable mother, Laura always thought of others before herself, particularly when it came to her daughter, Katharine Schaefer. She demonstrated selfless love in countless ways, such as packing extra food in her daughter’s backpack for classmates who might be in need. This nurturing spirit extended beyond her family; Laura took on the role of a mother figure to many of Katharine’s friends, ensuring that everyone felt cared for and supported.
Laura’s legacy is deeply rooted in her family and the memories of those she leaves behind. She is survived by her only child, Katharine Schaefer; her mother, Linda McKnight; and her brother, Ken McKnight. Laura will also be remembered fondly by her extended family and friends who were touched by her generosity, compassion, and light.
Laura is preceded in death by her father, Gaylon McKnight, and her brother, Scott McKnight, both of whom she holds dear in her heart.
Friends and family are invited to pay their respects during a visitation at Chism-Smith Funeral Home in Irving, Texas, on February 2, 2026, from 3:00 PM to 7:00 PM, followed by a funeral service at the same location beginning at 5:00 PM and concluding at 6:00 PM.
